To make cinnamon syrup, you can make an entire batch of simple syrup with a whole cinnamon stick broken up into it, or you can do what I do, and take about three quarters of an ounce of existing simple syrup and simmer it for about ten minutes with about a quarter of a cinnamon stick broken into pieces and dropped in.
